Blewitt Springs fruit. An interesting foray into whole-bunch
fermentation. 12 days on skins, with half aged in French hogsheads for 20 months. 50% whole bunches works exceptionally well here, imparting an extra degree of tannic precision and savoury brittle to the incorrigible fruit of the region. Cassis, sage, black olive, bay leaf and a sluice of maritime salinity melting into milk chocolate across the pushy finish. Exceptional tannins here.
