An interesting foray into whole-bunch fermentation. 12 days on skins, with half aged in French hogsheads for 20 months. 50% whole bunches works exceptionally well here, imparting an extra degree of tannic precision and savoury brittle to the incorrigible fruit of the region. Cassis, sage, black olive, bay leaf and a sluice of maritime salinity melting into milk chocolate across the pushy finish. Exceptional tannins here. Cellar to 2034.

The Cabernet Sauvignon is from a 70 year old vineyard in McLaren Vale. The ancient soils and elevation of the vineyard offer the perfect conditions for growing high quality Cabernet Sauvignon in small crops giving extreme intensity and complexity.
