Epic wine from iconic vineyards.

The Apollonian theory of Greek mythology entwines two seemingly opposite philosophical elements of the gods and brothers Apollo and Dionysus to create a complete and complex entity. Order and chaos, purity and excess, harmony and passion. Entwined by nature they are at their best when together. The vineyard, the winemaker, the vintage and the moment create the experience.

A fine wine of excellent depth of flavour. Although lovely in its youth it needs time to show its best attributes. Stelvin will ensure the wine remains fresh and lively for many years. Fresh, fine, complex and understated with subtle cream, nuts and peach overtones. The palate is crisp and tight with a supple mid-palate with drying savoury faint textural grip at the finish. Fresh and delicate with a generous mid-palate.

Harvest
Hand harvested into 50kg baskets at night.
Winemaking 
Margaret River portion (50%0- Hand-picked, whole bunch pressed, full solids and wild fermentation in barrique (approx. 25% new). Post ferment, barrels are left cool but unsulphured for 4 months to encourage autolytic activity. Batonnage every two weeks based on flavour and partial MLF. Wine was racked with full lees to tank in December and spent two months on lees in tank before bottling unfiltered.
Adelaide Hills portion (50%)- Grapes were picked into crates and pre-chilled fruit to below 5 deg C for whole bunch pressing. Juice was settled and racked to barrels with some solids. No acid was added. The juice underwent wild yeast ferment, which lasted for 3 weeks and continued to dryness. All barrels were left on lees for 12 months and a quarter were inoculated for malolactic ferment. Lees stirring aided the extraction of the creamy, nutty yeast lees elements in the wine. 12 months in French oak barriques. All from forests in the centre of France and Vosges. Half new oak and half second use.
