Barossa Valley Shiraz. Beefy and slightly advanced but with ample flavour on its side. Leather, red liquorice, bitumen and malt flavours swing juicily through the palate, iodine and plum notes appearing as the wine opens up. Satisfying shiraz.

Plum-purple colour, scents of cherry cola and fresh leaves. Bone-dry, with a chalky texture, plush dark fruits, choc-mint and sweet spices sweep across the full-bodied palate. Topped up with a lengthy, savoury finish. 2023 to 2029
Epic wine from Iconic vineyards
The Apollonian theory of Greek mythology entwines two seemingly opposite philosophical elements of the gods and brothers Apollo and Dionysus to create a complete and complex entity. Order and chaos, purity and excess, harmony and passion. Entwined by nature they are at their best when together. The vineyard, the winemaker, the vintage and the moment create the experience.
Deep garnet in colour with an alluring complex aroma of dark-cherry, plums and roasted vanilla bean. The palate is powerful and well structured, fleshy, with chewy textured tannins finishing with polish and focus. The 2018 was an exceptional Barossa vintage indicating this wine will mature well for many years.

Winemaking |
Destemmed and crushed into small 1.5 tonne open top fermenters. The crushed fruit was chilled for 6 days before being allowed to naturally warm up to start fermentation. To optimise the vineyard expression a range of hand plunging cap management techniques were used across the different vineyard parcels. the wines were then carefully blended, naturally clarified and bottled without filtration. |
Oak |
Post-pressing, the wines were transferred to a combination of new and seasoned French and American oak hogsheads. Matured for 20 months in oak without racking. |
